Quick-Pickled Strawberries

This recipe is very adaptable. Try with other fresh fruits or veggies such as cucumbers. Since fruits are naturally sweet you don't need much sugar; with veggies use a bit more.


Ingredients:
1-to-2 cups fresh strawberries
1 tsp. salt
1/2 tbsp. sugar
1 cup water
1 cup white vinegar
Fresh mint (a few leaves)
Fresh basil (a few leaves)
 
Options:
Thai chili pepper (1) - cut lengthwise (remove seeds and discard)
Star anise
Cinnamon stick
For a touch of savory, one clove of garlic (smashed)
