Step 1: Oil
Fresh herbs have essential oils in them that dried herbs don't; these oils enhance taste.

Step 2: Treat 'em Like Flowers
Treat your fresh herbs just like flowers; cut a little off the end and stick them in water --- they'll stay fresh for a week.

Step 3: Cooking vs. Finishing
Cooking herbs are generally “stemmy” like rosemary, sage, thyme etc. and respond well to cooking while finishing herbs like basil, tarragon and parsley are good for a last minute flavor pop.
