Best Pans for Baking

Featured pro:
Category: Cooking

Curtis Stone shows you all of the bakeware he has in his kitchen -- cake pans, cookie sheets, muffin tins, pie dishes, baking sheets, tart pans, springform pans and more -- and discusses how each piece of equipment should be used, whether it's made of metal, glass, ceramic or silicone.

Step 1: Cookie Sheet
Cookie sheets are multi-purpose pans. Their main advantage is that they have no lip or, edge so, food won’t stick but instead, slides easily off the pan. Great for free form tarts, pizzas and of course, cookies.

Step 2: Baking Sheet
Baking sheets have the edge all the way around the pan so, perfect for roasting potatoes, vegetables and even, baking a jelly roll cake or sheet cake. A universal, must have pan.

Step 3: Muffin Tins
These come in various sizes. Nonstick is best for muffin tins and, most convenient for the cook or, baker. Muffin tins can be used for much more than just muffins. Mini mac & cheese, egg frittatas, even potato straw baskets.

Step 4: Pie Dish/ Tart Dish
These dishes vary from glass to ceramic. Removable bottoms for tart shells, make for an easy transfer when bringing from stove to table.

Step 5: Bunt/ Spring-Fold Pan
Bundt pans are not only great for cakes but, monkey bread as well. Springform pans are perfect for cheesecakes. Pan sides are completely removable making it again, very easy for transfer.

Step 6: Lasagna Dish
Glass or metal, this is a must have. Baking and cooking are both perfect for this type of dish.

How about a ring pan. The platform is removeable unlike a bundt pan. Really fun to grease and flour the center column too.

Good grief. C'mon can't you come up with something more sophisticated like recommendations of materials. For example copper clad vs. ironstone - or something of redeeming value. This is just so nursery school information that it is a waste.

Well it was, in my opinion, very nice of him/them to do this as some people are just learning about baking and will find this information very helpful. I, for one, find GMC Trade Secrets very informative and useful.
