Taco Meat Alternatives

Chef Sam Talbot is here to remind you that chicken and beef are not the only options when it comes to tacos. Consider using leftovers with other items you have in the kitchen. Short ribs, kimchi, king crab and refried beans are some of Sam's favorite alternatives. Just build your taco, and you'll be good to go.

 Sam Talbot's Kitchen Sink Taco

Step 1: Kitchen Sink Tacos
Begin building your taco. Start with a corn tortilla and use avocado as a base.

Step 2: Sugar and Spice
Layer on some kimchi and some leftover short rib or whatever you have lying around. The spiciness of the kimchi will balance the sweetness of the meat.

Step 3: Crunch and Acid
Add some radish for crunch and a little lime for acidity and brightness. Enjoy!

Hey, nothing personal, but this is not a news site. It's a How-To site. The GM ads pay for it and the people who work on it so you can see it free. That's America. Let's hope both GM and other American companies like AOL stay in business and keep all their jobs in the U.S. Stop bad mouthing American businesses. Try to enjoy learning something about how to make some creative food dishes and be thankful for advertisers who make it so we can watch the videos free. I've picked up a lot of good tips from this site that my family have enjoyed, so thanks GMC and AOL. Go USA!

Granted -- this isn't your mama's taco -- unless maybe you live in Hawaii or japan -- but give this one a try -- SPAM tacos. Cut a couple of slices from a can of Spam and cut into a small dice -- pan-fry the meat until it starts to crisp in a hot pan (don't add any oil) -- once the meat is nearing completion -- toss in a good teaspoon full of chili-garlic sauce and stir it into the meat mixture -- remove from heat. Prep your tortillas (corn works fine but so does flour on this one) by heating in a hot dry pan or the micro until soft and pliable -- spoon in some meat and add some leftover pre-cooked rice or beans if available -- or just go straight up with some shredded cabbage or cole slaw on top -- seriously tasty. Try it.... BTW -- My brother loves it with bologna instead of Spam -- but I am a purist -- lol

I like Sam's ideas. So, put the tortilla over a flame, and then try some. I love the idea of short ribs and king crab.

My alternative to eating tacos for a dinner is the following; Mix up and cook the following : 20 0unces of spinache, one can of high fiber refried beans, one can of tomatoe sauce with pepper sprinkled on top. Then after its cooked place slice of bread in toaster then pour the pan on yummy

I a 65 year old retired Federal employee. I am Hispanic, born and raise in Texas. I respect all the chef's ideas of different tacos. I however could probably show you all what real tacos are. You would all be surprised what my Mama put in flour tortillas. Did not eat corn tortillas too much or Hot Sauce. Her parents had a big restaurant in Harlingen, TX and she did all the cooking and sometimes baking. Pies from scratch, and did not use recipes to cook, or use measuring cups or spoons. Great Food. That's a no-duh story and nothing new there. The tortillas looked as if they hadn't seen a flame yet and would break if folded ... would liked to have seen how they ate them though. Way too much stuff on the tortillas. Yesterday I made chili verde and Mexican rice ... ran out of tortillas so I'm off to the store get some more for a burrito or two. Oh yeah, no rice in a burrito please. Maybe some cilantro to freshen up the taste would have been nice to see.
