Tired of serving and eating the same old sides? Try Sam Talbot's flavorful Israeli couscous. Here, the expert chef shows you how to make an unforgettable dish, which incorporates fennel, onions, pine nuts, garlic and scallions with almond milk and chicken broth. With just a little preparation, you'll have a side that's sure to please.

Step 1: Cooking Liquid
Heat almond milk and chicken stock in a pot together. Bring to a boil. This will be the cooking/steaming liquid for your couscous.

Step: 2 Prep Your Veggies
Discard the stems of your scallions and slice. Set aside. Discard the stem of your fennel and cut in half. Core the fennel with the tip of your knife. Cut in half and julienne. Dice raw yellow onion and mince garlic.

Step 3: Cook Your Veggies
Take a little olive oil and coat a hot pan. Add your diced onions and garlic and let cook for a few minutes. Add your Israeli couscous, Italian pine nuts and coconut to toast. Add fennel and scallion, and season with freshly ground black pepper and sea salt. Add the juice of one-half of a lemon.

Step 4: Add Cooking Liquid
Pour veggies and couscous into a bowl. Pour cooking liquid over it and cover immediately with plastic wrap. After about 15 minutes, fluff with a fork and add a little bit of olive oil or lemon zest to taste. Enjoy!

this recipe was absolutely delicious. double the recipe to use all of fennel. if you pay attention you will see what is measured by looking at the cups he used with indg. very easy. pay attention. very good. had with pork chops. be sure to use israel cousous. makes a difference. so does the italian pine nuts. also in store.If you need help contact me tbreen44@aol.com

No you are not losing your mind. He didn't say when to add couscous, In reading the recipe one apparently adds the couscous to the 'stir fry' skillet; but, I thought he said the Israeli couscous took longer to cook? Oh, well, it looks fabulous so I'll give it a try tomorrow. :D
