How to Segment Citrus Fruits

Step 1: Zest
There are many kinds of citrus. Whether it’s lemons, orange, limes or grapefruit, there is zest on all of them. Roll the fruit slowly along a rasp, gently collecting the outer layer of color. Do not put too much pressure on the rasp. You do not want the white part under the skin, called the pith.

Step 2: Top and Bottom
Cut top and bottom off fruit using a small, sharp knife. Gently glide knife from top to bottom turning as you go. You will be left with a skinless fruit with the membranes showing.

Step 3: Naked Fruit
Once the skin is removed you will see the little membranes that make the segments of the fruit. Run your knife down either side of the segment you should be able to push it right out. the segment out.

Step 4: Squeeze
Once all the segments are removed remember to squeeze the fruit getting all the juice out; we don't want to waste anything.
