How to Roast Vegetables

Curtis proves that you can roast much more than just potatoes. He demonstrates how properly slicing a vegetable can maximize its cookable surface area. Brussels sprouts, anyone?

Step 1: Acorn Squash
Cut squash in half, use a spoon to remove seeds, and then cut the halves in half, then half again. Place pieces on cooking tray; be sure not to overcrowd.

Step 2: Red Potatoes
Cut potatoes in half and put them on same tray with squash.

Step 3: Beets
Cut beets in half and place on tray. Remember cook vegetables together that are going to take the same amount of time.

Step 4: Drizzle
Give the veggies a good drizzle of olive oil, add a few aromatics and pop in oven.

  • 1 Acorn Squash
  • 7-10 Red Potatoes
  • 3-4 Beets
  • 1/4 cup Olive Oil
  • 6 sprigs Fresh Thyme

Roast the veggies at 350 to 375 until done; check with a fork but probably around 20 to 30 min. for the squash tray; about 15 to 20 minutes for the other tray. You can utilize the temperature setting you may be using for other items and adjust time by checking for being done with a fork. I use the fork test! I would not roast at temps above 400 degrees however. Hope this helps.
