How to Make Perfect Pancakes

Start the weekend off right with Curtis Stone's perfect pancake techniques, including the ultimate from-scratch batter and delicious, inventive toppings.

Step 1: Batter
Whatever pancake recipes you follow remember that the more flour you use the heavier your batter. For lighter, fluffier batter use ricotta cheese with whisked up egg whites--- be sure and not whisk the batter too much or you’ll drive all the air out.

Step 2: Griddle Pan
Make sure your griddle pan is not too hot and brush with a bit of clarified butter. Put a couple of ladles, one right on top of the other, onto the griddle pan. Don't worry if they are not perfectly round-- they're handmade they should look handmade.

Step 3: No Crowding
Be sure and leave room for maneuvering; sometimes pancakes can be clumsy to handle so don’t overcrowd your pan.

Step 4: Bubbles
Be patient with your pancakes! Watch for bubbles to come up and pop, when you see that, it's time to flip.

Step 5: Get Fruity
Before flipping, stick bits of fruit right into the uncooked side of your pancakes then flip.

Step 6: Brush
Brush around the edges of your pancakes with some butter; be sure to gently tip your griddle pan forwards and backwards allowing the butter to flow under the cakes.

Hmmm, the batter is quite thick for normal pancakes. He needs to add a bit of liquid like milk (2%) or water. Not too much liquid. Of course with grandkids around I get complete powder, just add water. Add the fruit while on the plate.

There is nothing wrong with Pancakes, bacon and muffins. All in Moderation! All three are quite tasty. And ; As for being in the minds of OBESE people? I am 5 ft. 8in. 160 lbs. ; and deliver resturant and bakery supplies via truck. I have carried, 100 pounds of chocolate down basement stairs to their destination. You obviously have a personal problem. I love Pancakes, bacon and muffins.
