Marinate meats like a pro with Curtis' tips on wet and dry marinades.

Step 1: Wet or Dry
Your wet marinades are usually used for meats that will cook “low and slow” while your dry rubs are for faster cooking at higher heats.

Step 2: Acid and Oil
Like good vinaigrette good marinade need acidity and oil to enhance the flavor of the meat--add whatever herbs and spices you like.

Step 3: 1- 2 Hours
Always remember to let your meat marinade for 1 to 2 hours preferably right before you will cook. Glass and porcelain bowls even plastic bags are all fine for marinating but avoid using metals like aluminum as they can impart a metallic taste.
