How to Make a Bouquet Garni

Curtis Stone shows you how to add extra flavor to soups, stews and stocks by using two types of traditional spice packets: a bouquet garni and a sachet d'épices. Whatever method you choose, you'll love the seasoning it delivers.

Step 1: Bouquet Garni
A bouquet garni is a neat bundle of parsley, thyme, and bay leaf tied with kitchen twine. It adds a layer of herbaceous flavor to stocks, broths, soups, and stews. To make a bouquet garni, trim the ends off leek leaves to make seven inch long pieces.

Step 2: Spices
Place parsley, thyme, and bay leaves in between the leek leaves.

Step 3: Twine
Wrap an 18-inch-long piece of kitchen twine tightly around the leaves to form a packet. Add the packet to sauce or stock. Tie the excess twine around the pot handle to make it easy to fish out the bouquet when you are finished with it.

Step 4: Sachet d'Épices
A sachet d’epices contains ingredients such as herbs, peppercorns, and other spices that are tied up in a cheesecloth bag. It is primarily used for recipes that are not strained after cooking. Start by laying a six to eight inch square piece of cheesecloth on your work surface.

Step 5: Spices
Place the parsley, thyme, bay leaf, peppercorns, and garlic in the center of the cheesecloth.

Step 6: Twine
Gather the edges of the cheesecloth together and tie the sachet securely with kitchen twine. Add it to boiling potatoes, sauce or stock. Tie the excess twine around the pot handle to make it easy to fish out the bouquet when you are finished.
