How to Remove Skin From Fish

Curtis Stone demonstrates a simple technique for removing skin from salmon and smoked fish. All you need is a sharp knife and a little know-how, and you'll have perfect fillets in no time.

Step 1: From Tail
Starting at the tail of smaller end of your fish cut down to the skin. Then turn your knife slowly towards the top.

Step 2: To Top
Slowly work your knife back and forth towards the top of your piece. Periodically pull the skin up to make sure you are not going to deep.
