How to Quick Pickle

You could spend 30 days pickling the old-school way, but Sam Talbot has a method of quick pickling that will open the door to a whole new world of flavor and color for your dishes. By using fresh herbs and a simple vinegar solution, you can have a delicious product in just 30 minutes.

 Sam Talbot's Pickled Strawberries

Step 1: Solution
Make a pickling solution from water and vinegar -- one part each. In other words, 50 percent water and 50 percent vinegar. Bring to a boil and then turn heat off.

Step 2: Prep Strawberries
Trim off the stems from your strawberries.

Step 3: Score the Fruit
Make a small incision at top to help pickling liquids infuse into the fruit. Try scoring them, but not too deep, in an X formation.

Step 4: Ingredients
Add your fruit (or veggies) to a bowl, along with your salt, sugar and optional items.

Step 5: Submerge Your Fruit
Pour enough pickling brine over the ingredients to submerge. Then, stir a few times.

Step 6: Ensure Full Submission
Cover your bowl with piece of parchment paper and weigh it down with a can. You want to make sure the fresh fruit or vegetables are submerged so they soak up the pickling brine. Place in refrigerator for 30-45 minutes.

Step 7: Enjoy!
Your quick-pickled strawberries will keep for 2-3 days refrigerated. Try adding them to a salad or whole wheat pasta and enjoy!

  • 1 pint Fresh Strawberries
  • Salt
  • 1 tablespoon Sugar
  • 2 cups White Vinegar
  • 1 stem Fresh Mint
  • 1 stem Fresh Basil (a few leaves)

Sounds great. pickled onions. something like a sweet sour thing going on? The recipe on the video is easy ...1 part water and 1 part vinegar...that's the pickling recipe. add strawberries, a clove of garlic, one thai pepper , a sprig of mint, and couple of basil leaves. I suspect you can vary the amounts to your taste.

I quick pickel red onions in rice wine vinager and sugar. takes the heat out and leaves them crisp. great on sandwiches
