Step 1: Entrée
Plate selection is also very important. Don’t be afraid to use your hands when plating food. It allows you to scoop up food and, gently release vegetable adding, height and volume. Adding a puree to a plate can be easily done by, spooning 2-3 tablespoons of the puree onto the plate. Drag the back of the spoon through the puree to add a slight decorative accent.

Step 2: Desserts
Designing a dessert plate is slightly different. Not as much bulky food. Pour raspberry sauce into middle of the plate. Dip spoon into warm to hot water. Run the spoon the length of the mousse and create an oval shape that can be placed in the center of the sauce.
