How to Make Fruit Salsa

Fruit salsa is a great way to add a burst of color and flavor to your dishes. With a hot grill, some peaches and spices, you can make a delicious topping in minutes. Here, Sam Talbot shows you how to turn fresh fruit into smoky salsa that will add a brightness to any simple protein.

Step 1: Peach Prep
Slice a peach once on each side to make two perfect discs.

Step 2: Season
Season with olive oil, salt and pepper. Make sure to coat your peaches well.

Step 3: Grill Your Peaches
Place your peaches flesh side down on the grill. Choose a spot where there's indirect heat, and let cook for about 45 seconds to a minute and a half.

Step 4: Incorporate Raw Fruit
Take your fruit off the grill and place it on the cutting board. Go back to your original piece of fruit and slice off the remaining sides. You want to have a mix of raw and cooked peaches for texture and flavor.

Step 5: Chop Your Fruit
Give your raw and charred fruit a rough chop. There's no rhyme or reason to it. It's okay if the cooked fruit is a little mushy. It will make the salsa more saucy.

Step 6: Build Your Salsa
Build your salsa by adding fresh herbs like mint, scallion, basil, jalapeno and cilantro. Add more charred fruit -- charred peaches, nectarines, plums -- as well as more olive oil, salt and pepper.

Step 7: Use on Protein and Enjoy
Use the salsa on a filet of salmon or steak and you can instantly elevate the flavor of your food.

  • Cracked Pepper
  • Olive Oil
  • Scallions
  • 2 teaspoons Fresh Cilantro
  • 2 teaspoons Fresh Mint

  • 1/2 teaspoon Fresh Jalapeno
