How to Cook in Paper

Curtis Stone takes the mystery out of the French term "en papillote" by showing you his trade secret for the simple technique of cooking in parchment paper. Whether you're serving up vegetables, fish or poultry, this method will give you moist, delicious results with a gorgeous presentation.

Step 1: Paper Heart
Fold a large sheet of parchment paper in two then cut a heart shape out of it. Unfold and look into your heart. Don't forget to preheat your oven to 400 degrees.

Step 2: Heart Filled w/Food
Actually don't fill it, take some chopped carrots, onion, shallots, ginger, bok choy and shrimp and place in center of heart; be sure and leave some space around the edges because you're going to fold it back over.

Step 3: Fold
Using two hands slowly work your way around the edge folding as you go--- be sure and fold with one hand and use the other to keep what you have done sealed. When you get close to the end, stop and leave a small opening.

Step 4: Pour Your Heart In
Pour about a tablespoon of rice wine into the opening followed by a teaspoon of sesame oil and two teaspoons of soy sauce; then fold the last bit to seal.

Step 5: Eat Your Heart Out!
Take a hot tray from the oven and place the paper heart right in the center. You will notice that the heat from the tray immediately begins to steam the liquids inside. Place in oven for 5 to 6 minutes. Remove, plate and serve right in pouch--- eat your heart out!!!!

  • 4-5 Large Peeled Shrimp
  • 1/4 cup Carrots
  • 1 small Shallot
  • 2 teaspoons Onion
  • 1/4 teaspoon Ginger
  • 1 small Bok Choy
  • 1 teaspoon Sesame Oil
  • 2-3 tablespoons Soy Sauce
  • 2 tablespoons Chinese Rice Wine
  • Parchment Paper

If you add chicken breast pieces instead of shrimp, how long and what temperature do you all recommend?

I think the title is stupid on AOL: Meal That's Literally From the Heart..... um.... he's not feeding you human hearts or veins or blood or valves........ in fact, he's not feeding you any type of red thing at all... Maybe I would have bought it if it was: "Meal That's Literally in a Paper Heart..." Or "Meal that's Literally (Good) for the Heart, from the heart" but not literally from the heart.

As for the oven temp, I'd just go standard: 350F... or less.
As for the "he's creating" this technique, it says up top the French Term declassified, though not quite put that way. And I think maybe he might just be claiming the whole Heart thing if he's doing that even.

If instructors, such as Curtis Stone and so many others, would turn off the sound while they watched a video, they would soon realize what the hearing impaired go through on a daily basis. Our eyes replace are our ears. I would like to try the paper technique. I have some questions and not enough time to look for the answers.
