Very interesting concept....I have some family cheesecake recipes that require a 9" x 13" pan. Water baths normalizes the temperature variations that are inherent with any oven providing less heating - cooling cycling that is the culprit to cracking.

I have got to try this! I have been baking my cheese cakes at 250 degrees for 2-hours, but the receipe called for 450 degrees for 10 mins then turn down to 250 for 40 mins. If this works it will really cut down on bake time go quicker to the eat time.

I won't tell you the name of it here cause some of you will freak out on me, but if you google "whipped and beaten culinary works" you can find it.. but seriously don't go unless you can take a good joke or if you get offended easily..

Mostly when you do custard like flan you use a water bath. There are some cheese cakes to do that way in spring form pans. If you google what you want it will come up, or go to foodnetwork.com
