How to Carve a Turkey

Step 1: Joints
Remove the trussing from the turkey. Using a large sharp carving knife, cut through the turkey where the lower part of the breast meats the top part of the thigh, and then cut through the hip joint to release the leg from the turkey. Repeat to remove the second leg from the turkey. Next, cut through the drumstick and thigh joints of the legs to separate these pieces.

Step 2: Bone to Bone
Cut an incision on top of the turkey along both sides of the backbone and down the wishbone to begin separating the breast meat from the turkey. Continue slicing down and alongside the backbone and the breast bone, and gently pull the breast off the turkey in one whole piece. Repeat to remove the second breast from the turkey.

Step 3: Diagonal
Lay the turkey breasts, skin side up, on a carving board. Slice the breasts crosswise and on a slight diagonal.

Step 4: Serve
Arrange the drumstick and thigh pieces on a serving platter. Using the length of the knife, transfer the breast slices to the serving platter, and enjoy.
