As a frequent traveler, Sam Talbot is always trying to figure out ways to eat healthily on the go. Eating well is actually easier than you think, and with a little preparation, you can make delicious snacks and meals that will keep you fueled up as you head to your next destination.

Step 1: Frozen Pineapple
Take a fresh pineapple and cut it into perfect cubes. Throw the pieces in an ice cube tray and freeze. Stick toothpicks in them and stick them in a cooler when you're on the go.

Step 2: Super Sandwich
Take a loaf of fresh Italian bread, sour dough or even rye. Make a hole at one end and cut out the middle. Save the middle for breadcrumbs and stuff the inside with cold cuts, roasted vegetables or salads.

Step 3: Orzo To Go
Make orzo pasta and grab whatever you want to mix in it. Steamed veggies or even a vinaigrette.

Step 4: Superfruit Granola
Mix goji berries, fresh coconut, macadamia nuts, pepitas, white sesame and ground acai into granola. Fold together and you're good to go.

  • 3/4 cup Macadamia Nuts
  • 1/2 cup Coconut Flakes
  • 1/4 cup Pumpkin Seeds
  • 1 tablespoon White Sesame
  • 2 tablespoons Ground Acai
  • 1.5 cups Granola

Thank you, Sam, for your TRULY HEALTHY ideas! I have had Type-One Diabetes since 1977. I inject insulin 3 times daily, until there is a damn CURE. Too many OTHER chefs "proclaim" THEY have healthy food ideas; while YOU actually DO have healthy cookikng in idas. Thanks for your creativeness. Keep up the great work you do, Sam!
