Step 1: Sprinkling Sugar
Seal one piece of star anise and a Tahitian vanilla bean with sugar in an air-tight container for one week. Discard the star anise and vanilla bean. Add poppy seed, a touch of sea salt, freshly ground cinnamon, the tiniest bit of cardamom and ground ginger. Close the jar and shake.

Step 2: Simple Syrups
The recipe for simple syrup is: 2 cups of sugar plus 1 cup of water. Bring it to a boil and infuse any flavor you want.

Step 3: Ginger Syrup
Take 8-10 slices whole ginger and add them to your syrup base. Let sit for about 10 minutes. Let it cool, and then funnel into a jar and cork.

Step 4: Mint Syrup
Add fresh mint with the stems and all to your syrup base. Let it cool, and then funnel into a jar and cork.

Step 5: Blueberry Syrup
Take 2 cups of blueberries and add them into your syrup base. Stir and let sit for 10-15 minutes. Strain. Take the back of your spoon and push the blueberries into the sieve. Funnel into a jar and cork.
