Cooking With Shellfish

Step 1: Mussels
Your nose knows best. Mussels should always smell fresh; like the ocean or even a bit like cucumbers. Sift through your mussels removing any broken shells, should you come across one that is open, tap it--- if it doesn't close back up, chuck it.

Step 2: Clams
Clams and mussels are bivalves--- a shell consisting of two hinged valves. It's these valves that sometimes can filled with sand; take a vegetable brush and some water and thoroughly clean and rinse.

Step 3: Shrimp
Keep your shrimp on ice, shells on, until your ready to cook them.
