Step 1: Pick an Herb
Whether you're in your garden or at the supermarket, find a fresh herb that catches your eye.

Step 2: Smash It
Take a leaf of that herb, break it off and rub it in your fingers.

Step 3: Use Your Nose
Take a good whiff of the herb and think about your dish. Imagine the flavors of what you're cooking and the smell you're experiencing, and you'll be able to determine whether the herb you've chosen will work. It's as simple as that!
