How to Store Cheese

Step 1: Plastic vs. Wax
Plastic wrap versus wax paper when storing makes a big difference. Saran wrap keeps the air out. However, the gases will build up if the wrap is not changed every few days. For cheese that needs a few more days to ripen, wax paper is best.

Step 2: Best Storage
Cheese is best stored in a wine cellar where temperature is 55-62 degrees. If you don’t have a wine cellar, the crisper in your refrigerator works well too.

Step 3: Stinky Fridge
You open the refrigerator and bam the smell hits you right away. Try wrapping the cheeses as described and then storing them in sealable plastic containers.

Step 4: Is that Mold???
If you have stored cheese and notice small amounts of mold on it, cut away the mold. The remaining cheese is perfectly good to eat.

Step 5: Buy What You'll Eat
The best way to ensure freshness is not to buy too much cheese at one time. Only buy enough cheese you feel you will eat in 1-2 weeks time.
