How to Make a Cheese Plate

Curtis Stone takes you into one of America's top cheese stores to give you his trade secrets on putting together the perfect cheese plate for entertaining.

Step 1: What to Choose?
While there are no hard fast rules there are some well established traditions.

Step 2: Odd Number
Serve and an odd number of cheeses; the balance of odd numbers is more visually appealing.

Step 3: Soft to Firm
Arrange the cheeses by their firmness clockwise.

Step 4: Goat, Cow, Sheep and Blue
It's not a children's book. One tradition is to try and have one type of each on your platter and then double up on one. Remember odd numbers.

Step 5: Think Globally
Try and have a variety of countries represented. Although you can go the opposite route and have just cheeses from one country. Remember there are no rules.

Step 6: Bread not Crackers
Most experts will tell you that cheese should be served with bread, not crackers--- but again there are no rules.

Step 7: Sweets
Serve some sweets to counterbalance the cheese flavors like fruits, truffle honey, sun-dried tomatoes etc.

Step 8: Wine
Pick wines and cheeses that will not overpower each other.

Step 9: Temperature
It is so important not to serve cheese cold. Cheese should be removed from the refrigerator at least an hour before serving. Cold cheese = no flavor
