Basic White Sauce

Step 1: Rue
In a moderately hot pan drop in some butter and as it melts work in an equal amount of flour with a spoon.

Step 2: Cook Flour Out
As you stir your butter and flour together the color will begin to change, when it does it's time to add milk.

Step 3: Milk
Add a little bit of milk and really work it around with your spoon. Add a little more milk each time until the sauce is smooth and creamy. Taste the sauce to make sure there is no taste of flour.

Step 4: Add What You Like
Now you can add cheese, herbs, mustard whatever you like. Like Curtis says "Once you've got a good white sauce in your pocket your options are open!"
