Step 1: Egg Varieties
There are many different choices when it comes to eggs. Free-range, Cage-free, Vegetarian and Organic are all alternatives to the commercial factory farms. Curtis suggests buying eggs from happy chickens.

Step 2: Free-range vs. Cage-free
Are they the same? Not really. Cage-free chickens are free from a cage but do not necessarily have access to the outside. Free-range chickens, like the rest of us, come and go as they please.

Step 3: Egg Size Matters
When cookbooks call for an egg they are looking for a particular size. The industry standard for eggs is large. This is important when following recipes because if you are not using the large egg you will be adding too little or too much.

Step 4: Fresh Eggs
It's not easy to judge an egg by its shell-- you have to crack it open. If the egg sits up nicely on the plate you know it is fresh.

Step 5: Keep them Cold.
It is very important to keep eggs refrigerated. An egg not kept in a fridge will deteriorate seven times faster than those in kept in.
